Peanut Chicken Stirfry ThumbnailFor many cooks, stirfry is a great technique to master. It allows us to include a wide variety of vegetables into a single meal. Throwing in a few hot peppers can give the recipe a touch of “spicy”. Better yet, a stirfry easily supports all sorts of meats like beef, chicken, pork, and seafood. For todays’ Peanut Chicken stirfry, I chose a straightforward recipe-chicken, bell peppers, Thai pepper, and onions. I topped the mixture with peanuts.

Today for Lunch | June 13th | Hawaiian Chicken ChiliChicken chili is a great way to make chili lighter and healthier. Hawaiian Chicken Chili adds fun. Break out your baggy shorts, grass skirts, and ugly flower shirts. 🙂  This chili is spicy and sweet at the same time. At only 154 calories, it is easy on the diet plan too. I sneak kale, bell peppers, and light chick peas into the mix, giving this chili extra vitamins and minerals. And don’t forget the pineapple. Big time Vitamin C.

Bacon & Egg Breakfast Pizza

Today for Lunch | May 9th | Bacon and Egg Breakfast PizzaBreakfast pizza is not a new thing. Many people have countless variations on this theme. I enjoy being creative in the kitchen, so I put a twist on the recipe. I crafted the “pizza dough” out of hash browns. I placed 3 fresh eggs on the dough. I topped the eggs with cooked bacon bits. Here is the twist…I baked it all on a pizza stone. All the standard elements of breakfast – (Bacon, Eggs and Hash browns) – baked on a pizza stone.

Potato Croquettes

Today for Lunch | May 3rd | Potato Croquettes Potato Croquettes are fascinating. So simple in theory. A baked ball of potatoes with maybe a few other ingredients. Every cook faces mistakes in the kitchen. You have one idea in your head and the result is not even close. However, when I tried this recipe, I failed. Not just a simple failure but one of those massive “burn the toast, set off the smoke detector, cause world hunger” failures. Laugh with me folks. Oddly enough, this dish tasted great but to call these Potato Croquettes is a culinary sin.
