This sausage tortelloni recipe is delicious and filling. In my mind, you can never go wrong with Italian food for lunch. The real trick is to use fresh ingredients. Buy organic mushrooms. Chop a real onion. Shred parmesan cheese from the block. Make your own spaghetti sauce. All of this adds to an enjoyable lunchtime experience.

Sausage Tortelloni Inspiration
I am a big fan of the Buitoni™ brand noodles, but I find them too expensive for my budget. Most of my Italian recipes use higher quality organic pasta which can be found at much lower prices. However, I always keep my eye out for sales and discounts. As luck would have it, I found a family size sausage tortelloni package on closeout at half off the normal price. Imagine my excitement as I tossed the last bag on the shelf into my shopping cart.

Taking Advantage of Good Fortune
After finding a great deal, I knew I had to follow it up with fresh ingredients. Buy organic mushrooms and onions in the produce department. Pick up authentic Parmesan cheese at the deli. I knew I had homemade spaghetti sauce in the refrigerator. The stage was set for a great meal.
Traditionally, Italian recipes do not require a lot of heating. One or two minutes in the microwave is sufficient. Pasta is meant to be tender so the “soggy effect” of microwave cooking is not an issue. I bring a couple pieces of Italian bread with this lunch. Topping the sausage tortelloni with an extra dose of spaghetti sauce is a good idea too.
