Why Imitation Lobster?
We preach “Fresh and Unprocessed.” However, we create this recipe using imitation lobster. Indeed, we would love to use fresh lobster but at some point ingredients become cost prohibitive. After a recent lobster shortage, prices have climbed to record level highs according to an article in UnderCurrentNews. So we opted to use imitation lobster meat. As a side benefit, the cost of making one lobster wrap with imitation lobster meat came in at an impressive $1.05 USD. Hopefully, the use of fresh bell peppers, tomatoes, and red onions will make up for our slight indiscretion.
Low Carb Notes
We are pleased with carbohydrate levels in this recipe. Lettuce, tomatoes, bell peppers and onions added less than 2 grams of carbs to our Lobster Wrap recipe. Only the processed imitation lobster meat and cumin seeds added 4 to 6 grams of carbohydrates. When it was all said and done, each wrap contained about 7 grams or 2% of the recommended daily value. For those people using the Atkins diet or the Paleo diet, this sandwich is perfect.
