Chicken ala king is a childhood favorite. As an adult and a good cook, I had to try making the recipe with fresh, healthy ingredients. I created a fabulous version of the recipe with just a few easy steps.

Chicken ala King Memories
As a child, we jumped for joy when our Mom would bring home those boil-in-a-pot Chicken ala King bags. We loved them because they were easy enough for a kid to make, it was a hot meal, and (to us) it tasted great. Little did we know, that those boil bags were full of low-quality ingredients. All we knew was it was delicious. Today the boil-in-a-bag meals are replaced by microwave dinners.

Making this Recipe
Fast forward to today. What would happen if you tried Chicken ala King from scratch? Hmmm. Oddly enough, many of my lunch creations come from childhood memories. I just use fresh, healthy ingredients. This recipe was no exception. I decided to serve mine with a helping of creamy mashed potatoes and gravy. I use lots of gravy. My only regret was not using more vegetables in the recipe, but I was looking to recreate my childhood memories. Imagine the picture with mushrooms, fresh cut green beans or spinach.
Important Lunch Warning
This meal did not stand up well in the microwave. It all meshed together. I was left with a plastic tray of what appeared to be something served in prison. 😡 Trust me, the flavor was great. The ingredients were healthy. However, the visual appeal was zero. I found a secluded spot in the office to enjoy this meal.
